One of my mum’s classics
To be served with: steak, deep fried chicken, sausages, sweet potato stew, or alone, for immediate comfort
- Potatoes (mum suggests Maris Piper or King
Edwards, but any apart from baby or new potatoes will do)
- Grated cheese
Boil the potatoes for ‘a good 12 minutes’, drain, and mash with butter and mustard. An electric beater is useful here for texture’s sake. Mix in grated cheese and bake for 20 minutes at 200 (bottom shelf).
My review: For a little extra you can top this with brilliant breadcrumbs, or add cooked bacon, or jalapeños, add different varieties of cheese, or all of these. It lends itself to pretty much anything while remaining pretty much perfect as it is.
